I’ve been wanting to try a recipe from Hope & Greenwood’s book for a while, and finally got round to making this fudge on Sunday. The vanilla flavour comes from adding the seeds freshly scraped from a vanilla pod.
The recipe involves checking temperatures with a sugar thermometer and lots of beating, but it really is well worth the effort. This is supposed to be crumbly in texture and mine isn’t – but I am sure that was something I did wrong. Anyway, it doesn’t matter as this tastes fantastic, even if I say so myself!!
