Chocolate & Beetroot Cake

I decided to try baking something a bit different this weekend and spotted this recipe in one of my many cookery books. Like carrot cake and courgette cake this was beautifully moist, which is one of the benefits of using vegetables in cakes I suppose! This is topped with a dark chocolate ganache. ¬†Personally I don’t really like icings made with too much dark chocolate, so next time I make a similar cake I think I will try a different type of chocolate… The friends who tried this cake didn’t realise that it had beetroot in it – one of them doesn’t like beetroot at all but still enjoyed the cake…
